Pepper grows as berries on the tropical pepper plant, Piper nigrum, the sharp taste of black peppercorns is caused by the component piperine. The black pepper is produced from the unripe harvested (green and slightly red) berries, which turn brown to black when dried. The outside of the black pepper is wrinkled. The white pepper also comes from the unripe berries. These berries are soaked in water. This causes them to ferment. The berries burst open and the grain emerges. These grains must then be washed well. The white peppercorns are the same size as the black ones. The white pepper is therefore created by removing the peel. The longer production process makes white pepper the most expensive of the three colors of peppers. The green pepper, like black pepper, is produced from the unripe fruit. But the fruit is preserved, for example in vinegar or salt water.
Grind the grains just before use or add them whole to dishes, marinades and patties.
